
Feast your eyes on this super easy ground beef recipe...it's a new family favorite recipe!
This, my friends, is bacon cheeseburger rice. It's goo-ood. And easy. Thanks W.R. for a new favorite main dish!
Here's what you need:

One pound of ground beef, browned with a chopped onion. Ketchup, yellow mustard and BB-Q sauce. Five slices of fried bacon, two cups of prepared rice (left over from last night's meal, even!), shredded cheddar cheese, and dill pickle relish. Or you can use your favorite brand of pickles diced up. But the pickles are very, very important in this recipe. Don't leave 'em out, or you'll be sorry.

First, fry up the bacon in an oven safe skillet. Drain the fat, but you don't need to bother wiping the pan clean. Toss in the diced onion and ground beef, and brown until fragrant. I think the flavor is best when the edges start to get dark brown. Drain off any extra grease. Next, stir in the ketchup, mustard, BB-Q sauce, and two cups of rice...

and add salt and pepper to taste. Stir in just enough water to moisten, and heat through. Turn your broiler on to low.
Top with shredded cheese...
and pop the pan under the broiler for a minute or two until the cheese is melted.

Top with crumbled bacon and pickle relish. The pickles make it perky. And ring that dinner bell...suppah is served!
This easy ground beef recipe got a big thumbs up from all of my crew, and we're going to be adding it to our family favorite recipe rotation. You can make it even easier to pull together in a pinch by doing any of the following:
- Making extra rice earlier in the week so you can use the leftovers in the Bacon Cheeseburger Rice.
- Frying up extra bacon with breakfast or as part of another recipe. Store the crumbled leftovers in the fridge for use in this recipe, but add them on top of the cheese and let them warm/crisp under the broiler
- Pre-brown ground beef and chopped onions and store in the freezer in one pound bags. This is a great time saver, as you can toss together tacos, sloppy joes, ground beef stroganoff, chili, or this yummy dish in minutes!
