This oven fries recipe is simple, quick and delicious! It’s also versatile in that you can use any blend of spices that you like, and even make them spicy with some cayenne. But our family favorite recipe is this non-spicy but very flavorful blend. Here’s what you’ll need:
4 medium potatoes, butter, paprika, parmesan, flour, Greek Salad Dressing Recipe blend (or onion powder, garlic powder, salt, and pepper if you don’t have the Greek spice blend handy)
Preheat your oven to 450 degrees. Put 1/4 c. (a half of a stick) of butter into a metal or ceramic baking pan, and slide it into the oven to preheat. Please don’t use glass…I’ve had a glass 9×13 explode on my countertop when making this recipe, and that’s just not good for business.
Wash your taters, and cut them into fries. My Mama says the skins are the most nutritious part, so we don’t peel them, but you can if you wanna. You can also get creative and do chunks or steak fries too…whatever floats your boat.
This is how I cut the potatoes. Most potatoes have a wide side and a skinny side. I stand them up on their skinny side first and cut the potato into about 3 or 4 equal slices.
Then, I turn the whole thing onto the wider side, which makes it more stable for cutting through the layers. Again, cut it into about 3-4 evenly spaced sections. I also trim off the points. For no particular reason, other than I don’t trust pointy fries.
And now you’ve got fries! Trustworthy, non-pointy fries.
Put them into an micro safe bowl, and add about 2T of water. Microwave on high for 5 minutes. This cuts off a lot of the cooking time in the oven…Yay!
(If you don’t have/use a microwave, then just add on about 15 minutes to the cooking time below.)
While the fries are cooking in the microwave, put 1/4 cup of flour and parmesan cheese into a gallon size zippie bag. Add in a Tablespoon of Paprika…
and either a 1 1/2 teaspoons of Greek Spice Mix or 3/4 teaspoon salt, and 1/8th teaspoon each of pepper, garlic powder, and onion powder. Shake to mix everything together.
Dump the potatoes into the bag of spices and shake to coat.
It looks like the butter is nice and hot and bubbly…purrrrfect.
Dump in your seasoned fries, and spread them out a bit.
Man, they look good enough to eat already, and they haven’t even gone into the oven yet.
Bake these guys for 15 minutes or so, and flip them over. Bake another 10-15 minutes until potatoes are crunchy on the outside and soft on the inside.
Oh yum!!! I wish they weren’t 1000 degrees, or I’d be chowing down right now. I like to sprinkle them with big flakey salt, and let them cool just a bit before serving. They actually get a bit crunchier as they cool.
- ¼ cup flour
- ¼ cup parmesan cheese
- 1 tbsp. paprika
- 1½ t. Greek Seasoning Mix
or sub the following for Greek Seasoning Mix:
- ¾ tsp salt
- ⅛ tsp fine bl. pepper
- ⅛ tsp. garlic salt
- ⅛ tsp. onion powder
- Place butter in a metal 9×13 or cookie sheet w/ sides, and put in oven to pre-heat.
- Wash and trim or peel 4 medium potatoes.
- Cut into fries, cubes or wedges as desired.
- Place in microwave safe bowl with 2 T. water, and cook on high for 5 minutes.
- While potatoes cook, blend together remaining ingredients in a gallon size plastic bag.
- Drain water off of potatoes, and drop into bag of spice mix.
- Coat potatoes with seasonings.
- Place in single layer in pan with the melted butter.
- Bake for 15 minutes, then turn fries over.
- Continue to bake until tender- another 10 to 15 minutes for regular sized fries, and longer for steak fries.
